Dietetic Internship Program


Rotation Sites

The Dietetic Internship rotations for each student will be tailored to include a wide range of clinical and practical experiences.  The intern will meet the required competencies for a general dietetic internship.   All of the sites employ registered dietitians (RD), including some of our own graduates!

Community / Health Promotion / Nutrition Education:

The RD is recognized as the nutrition expert in the community.  For the community, health promotion and nutrition education rotations, the intern receives valuable exposure to sites in the greater Houston metropolitan area where the RD plays a pivotal role in health promotion.  In addition, nutrition research in the community is included to demonstrate the dietitian’s role in investigation and program evaluation.

Hospital Foodservice Management:

With the increasingly regulated field of hospital foodservice, the dietitian plays an important role in the accreditation process, quality evaluation, as well as fiscal accountability.  In addition to getting hands-on experience with hospital foodservice systems, many detailed projects are completed by the intern that are used directly by the hospital administration.

School Foodservice:

Child health is a national subject of concern and the Michael and Susan Dell Center for Advancement of Healthy Living is one of the primary centers investigating preventative measures to combat increases in childhood obesity and other nutrition related chronic diseases.  The intern will experience firsthand the role of the School Foodservice RD to implement healthy lifestyle menus and education in various school districts around Houston.

Clinical Medical Nutrition Therapy (MNT): 

The RD is an important member of the healthcare team.  The hospitals in the Texas Medical Center and surrounding Houston areas provide a wide variety of experiences from pediatrics to geriatrics, including such diseases as cancer, transplant, renal, cardiac, HIV/AIDS, trauma and burns.  The interns will be supervised by RDs who specialize in MNT, many with advanced degrees and board certifications in their specialty areas.   Each intern works with a children’s diabetes camp during the summer which provides invaluable experience in the application of clinical MNT to everyday life.
