Required Course Descriptions for the Dietetic Internship

PH 1231 ADVANCES IN MEDICAL NUTRITION THERAPY. 4 credits. An advanced course focusing on the assessment and nutritional management of persons with conditions requiring medical nutrition therapy in general medicine (diabetes, cardiovascular, gastrointestinal) and critical care (surgery, renal, oncology, enteral and parenteral nutrition), hospice and home health care. Specialized nutritional needs and principles of clinical management are covered. Grades are based on completion of assignments, group participation, and attendance. Prerequisite: approval of instructor. Class meets 4 hours per week during Fall semester.

PH 1232 PUBLIC HEALTH NUTRITION PRACTICE. 3 credits. This course presents an overview of the roles, responsibilities, skills and career opportunities of the public health nutritionist. Topics include identification of community problems, needs, and resources; planning/administration of nutrition programs and services; evaluation of program effects, and development of skills in the areas of nutrition education, communication, and nutrient databases. Applications of national dietary goals to various population groups will be presented. Practical experiences from local and state agencies will be included. Class meets 3 hours per week during Spring semester.

PH 1234 ADVANCES IN SPECIALTY NUTRITION PRACTICE. 2 credits. An advanced course that provides the student exposure to selected areas of specialty dietetics through lectures from practicing dietetic specialists, projects, and in class presentations. Preparation for membership in the American Dietetic Association, sitting for the Registration Examination for Dietitians, state licensure and professional practice plans will also be included. Open only to dietetic interns concurrently assigned to the Specialty Practice Supervised Practice Rotation.  Class meets 2 hours per week during Spring semester every other year.

PH 2998 DIETETICS RESEARCH METHODS. 2 credits. This course will instruct students in the methods of proposal development.  Students will learn how to formulate research questions (objectives), develop a literature review and methods section, present data in tabular and graphical format and how to create a brief oral and slide scientific presentation of their research.  The faculty of the Dietetic Internship will provide an overview of nutrition research at SPH and local collaborators will be included as appropriate to facilitate student/faculty collaborations on nutrition related research or practice opportunities.  Students will complete their Culminating Experience (CE) or thesis proposal outline.  The course may be repeated. 

PH 9997 PUBLIC HEALTH PRACTICUM. 1-3 credits. Enrollment in PH 9997 during Supervised Practice of Dietetic Internship Program to attend Camp Rainbow for Diabetic Children with Texas Children’s Hospital and the Texas Lions Camp for Children with Diabetes in Kerrville, TX. Fulfills practicum requirement of M.P.H. degree simultaneously. (* Enrollment required.)

PH 9997 Sections 800 and 850. PUBLIC HEALTH PRACTICUM. 1-9 credits each. Enrollment in PH 9997 during Supervised Practice of Dietetic Internship Program, Spring Semester for two years with Summer session between years. Fulfills practicum requirement of M.P.H. degree simultaneously.
